<p>Since you haven&#8217;t been tested, some things you should know:<br />
1. If you happen to have celiac disease, when you eat gluten it will destroy the tips of the villi. These happen to be where lactase is made, so it makes you lactose intolerant, too. So if you DO have problems with gluten, that could be why dairy bothers you (if it does).</p>
<p>2. Of those I&#8217;ve spoken to in the gluten free community, the most common foods that seem to cause trouble, especially mental trouble, have been gluten, dairy, and soy.  Nightshades and corn run a close second.</p>
<p>3. You may want to look up gluten cc, or gluten cross contamination, and check into avoiding that. If you are avoiding gluten AND you have celiac disease, or if you have gluten intolerance and it is severe, this could be an issue, and as you can&#8217;t get tested, it&#8217;s probably worth your while. </p>
<p>Many people who have neurological problems from gluten are VERY sensitive (this from speaking with those in the celiac community. It hasn&#8217;t been studied medically hardly at all, so there is no hard data on this). To avoid the neurological affects, many of these folks not only have to avoid obvious gluten, but they must avoid gluten contamination too. Gluten food touches their food, that causes problems. Food that is made in factories on equipment lines that are shared with gluten food &#8211; that causes problems. Plastic and wood will absorb gluten and release can release it into foods that contact it afterward and cause problems (basically, if a substance can stain, it&#8217;s porous to gluten. So glass, silicon, and stainless steel seem to do all right). So new cutting boards or wooden spoons make a difference. </p>
<p>There are books to help find safer foods among the general food supply: you can look up gluten free grocery shopping guide on a search engine and it&#8217;ll show you some.</p>
